- 0.5 Tbsp Gochujang (Korean chili paste, based on a rice spoon)
- 0.5 Tbsp Soy Sauce (based on a rice spoon)
- 1 Tbsp Gochugaru (Korean chili powder, based on a rice spoon)
- 0.5 Tbsp Oligosaccharide or Corn Syrup (based on a rice spoon)
- A little water (for adjusting consistency)
Cooking Instructions
Step 1
First, to remove any bitterness or fishy smell from the dried shrimp and make them more fragrant, lightly toast them in a dry pan without any oil over low heat. This process enhances their flavor and makes them tastier. Stir them for about 1-2 minutes, being careful not to burn them.
Step 2
Now, let’s make the delicious sauce. In a small bowl, combine 0.5 Tbsp gochujang, 1 Tbsp gochugaru, 0.5 Tbsp soy sauce, and 0.5 Tbsp oligosaccharide. This is the golden ratio for sweetness and spiciness! Finally, add a tiny amount of water (about 1 tsp) to slightly thin the sauce. This prevents it from burning in the pan and helps it coat the ingredients well.
Step 3
Heat the pan again over low heat, add the prepared sauce, and stir-fry it gently for about 30 seconds. Stirring the sauce briefly like this brings out its full flavor. Be careful not to let the sauce burn.
Step 4
Once the sauce is lightly stir-fried, add the toasted dried shrimp to the pan. Mix them well to ensure the shrimp are evenly coated with the sauce.
Step 5
Finally, turn off the heat and toss the dried shrimp and sauce together using the residual heat in the pan. If needed, you can add a tiny bit more water to reach your desired consistency. Your chewy, spicy, and sweet stir-fried dried shrimp are ready! They taste even better once they’ve cooled slightly and the flavors have melded.
