Spicy and Sweet Stir-fried Duck (Ori Jumeokbap) Recipe
Delicious Stir-fried Duck Meat with Gochujang and Spices
Ori Jumeokbap is a beloved Korean dish where fresh duck meat is marinated in a flavorful mixture of gochujang (red chili paste), gochugaru (red chili flakes), soy sauce, and other seasonings, then stir-fried to perfection. The tender texture of the duck combined with the spicy and slightly sweet marinade is incredibly appealing! It’s delicious served over a bowl of rice, wrapped in fresh lettuce or perilla leaves, and makes for an excellent accompaniment to drinks. Don’t forget to stir-fry some rice in the leftover delicious sauce at the end for a complete and satisfying meal.
Main Ingredients (Measurements: Tablespoons)- 500g Fresh Duck Meat
- 1 Onion
- 1/4 Carrot
- 1 Green Onion (Scallion)
- 5 cloves Garlic
Spicy and Sweet Marinade- 3 Tbsp Soy Sauce
- 2 Tbsp Gochujang (Korean Chili Paste)
- 2 Tbsp Fish Sauce
- 2 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Minced Garlic
- 1 Tbsp Mirin (or Rice Wine)
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper
- Pinch of Ginger Powder
- 3 Tbsp Soy Sauce
- 2 Tbsp Gochujang (Korean Chili Paste)
- 2 Tbsp Fish Sauce
- 2 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Minced Garlic
- 1 Tbsp Mirin (or Rice Wine)
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper
- Pinch of Ginger Powder
Cooking Instructions
Step 1
Start by patting the fresh duck meat dry with paper towels to remove any excess blood. This step helps to eliminate any gamey smell and ensures a cleaner, more pleasant flavor in your final dish.
Step 2
Cut the green onion into segments about 5cm long. Slice the onion and carrot into thick matchsticks. Thinly slice the garlic cloves.
Step 3
In a large bowl, combine the soy sauce (3 Tbsp), gochujang (2 Tbsp), fish sauce (2 Tbsp), and sugar (2 Tbsp). Add gochugaru (1 Tbsp), minced garlic (1 Tbsp), mirin (1 Tbsp), and sesame oil (1 Tbsp). Sprinkle in a pinch of ginger powder and freshly ground black pepper for extra aroma. Mix these marinade ingredients well. Then, add the prepared duck meat and gently mix it with your hands, ensuring each piece is coated evenly with the sauce.
Step 4
While you can cook the duck immediately after marinating, letting it rest allows the flavors to meld and deepen. Refrigerate the marinated duck for at least 30 minutes, or ideally for a few hours or overnight for the best taste. If you’re short on time, feel free to proceed with cooking right away; it will still be delicious.
Step 5
Heat a spacious pan over medium-high heat. Add the marinated duck meat and begin to stir-fry. When cooking the duck and marinade together, use high heat and stir quickly to seal in the juices and keep the meat tender.
Step 6
Once the duck starts releasing its flavorful oils, add the sliced onion and carrot. When adding the vegetables, reduce the heat to medium and stir-fry gently. Continue cooking until the onions become translucent and tender.
Step 7
Add the chopped green onion to the pan and stir-fry until it wilts slightly. Once all ingredients are cooked through and the aroma is enticing, transfer the delicious stir-fried duck to a serving plate and enjoy!
