Main Ingredients- 1 large handful of prepared dried anchovies (for stir-frying)
- 3 whole cloves of garlic
Seasoning & Others- 3 soju cups of water
- 4 Tbsp of seasoned soy sauce (or Guk-ganjang)
- 3 Tbsp of oligosaccharide (or corn syrup)
- 1/2 Tbsp minced garlic
- 2 Tbsp of mirin (rice wine)
- A pinch of sesame seeds
- A drizzle of canola oil
- 3 soju cups of water
- 4 Tbsp of seasoned soy sauce (or Guk-ganjang)
- 3 Tbsp of oligosaccharide (or corn syrup)
- 1/2 Tbsp minced garlic
- 2 Tbsp of mirin (rice wine)
- A pinch of sesame seeds
- A drizzle of canola oil
Cooking Instructions
Step 1
First, remove the stems from the Korean green peppers and wash them thoroughly under running water. Pat them dry. You can also cut them into bite-sized pieces if you prefer.
Step 2
Using a fork or a toothpick, prick the Korean green peppers a few times. This step helps the seasoning penetrate deeply into the peppers, making them even more flavorful.
Step 3
Peel the whole garlic cloves and slice them thinly. The rich garlic aroma will enhance the taste of the anchovies and green peppers.
Step 4
In a wide pan (like a Wok or a deep skillet), combine 3 soju cups of water, 4 Tbsp of seasoned soy sauce, 2 Tbsp of mirin, and 3 Tbsp of oligosaccharide. Mix well to create the base seasoning.
Step 5
Bring the seasoning mixture to a simmer over medium heat for about 2 minutes, allowing it to slightly reduce. Then, add the prepared Korean green peppers and sliced garlic. Stir occasionally as it simmers for about 5-7 minutes, allowing the sauce to coat the peppers.
Step 6
Once the sauce has reduced to a glaze, add the dried anchovies. Gently stir to combine, being careful not to break the anchovies. It’s best to stir-fry over medium heat rather than high heat to prevent the anchovies from becoming too hard.
Step 7
When the anchovies are well combined with the sauce, add 1/2 Tbsp of minced garlic and stir-fry briefly. Finally, sprinkle in some sesame seeds for a nutty aroma.
Step 8
