  • 120g Korean green peppers (Ggwari-gochu)
  • 1 eggplant
  • 150g ground pork or thinly sliced pork
  • 1 stalk green onion
  • 1/2 onion

Trim the stems off the Korean green peppers and cut them into roughly 3 equal pieces. Slice the eggplant into similar-sized pieces. Finely chop the green onion and thinly slice the onion.

Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped green onion and minced garlic, and stir-fry until fragrant, being careful not to burn them, to create a savory green onion oil.

Once the green onion oil is fragrant, add the prepared pork and stir-fry. At this stage, add 1 tablespoon of cooking wine (like Mirin) to help remove any gamey odors and tenderize the pork. Break up the pork as it cooks to ensure it’s evenly browned.

When the pork is fully cooked, add 1 tablespoon of doenjang and 1/2 tablespoon of sugar. Stir-fry briefly to combine the seasonings evenly with the pork. Be mindful of the heat to prevent the doenjang from burning.
