Step 1
Thoroughly rub the suckers of the live octopus multiple times to remove any debris. Then, add flour and gently knead the octopus to clean it. This helps to make the octopus cleaner and enhance its chewy texture. Rinse thoroughly under running water.

Turn the octopus head inside out and carefully remove the innards, eyes, and beak. This step is crucial for eliminating any unwanted odor and ensuring a clean taste.

Briefly blanch the cleaned octopus in boiling water for just about 10-20 seconds. Be careful not to overcook, as this can make the octopus tough. Immediately rinse the blanched octopus in cold water to cool it down and achieve a firmer, springy texture.
