Main Ingredients

  • 2-3 small octopuses
  • 1/2 onion
  • 1/2 green onion
  • 1/3 carrot
  • Cabbage, as desired

Seasoning Ingredients

  • 2 swirls soy sauce (approx. 2 Tbsp)
  • A splash of cooking wine (mirin)
  • 1 heaping Tbsp gochujang (Korean chili paste)
  • 1/2 Tbsp gochugaru (Korean chili powder)
  • 2-3 Tbsp oligosaccharide (or corn syrup/honey)
  • 1/2 Tbsp minced garlic (optional)

Cooking Instructions

Step 1

Thoroughly clean and defrost the octopus. While you can stir-fry it directly with vegetables, for a more tender texture or to speed up cooking, briefly blanch the octopus in boiling water for 1-2 minutes. This helps prevent the octopus from becoming tough and allows it to absorb the seasoning better.

Step 1

Step 2

Slice the green onion diagonally and chop the cabbage into bite-sized pieces. Slice the carrot to a similar size. Cutting the vegetables into appropriate sizes ensures they cook evenly with the octopus and are easy to eat.

Step 2

Step 3

Place the prepared octopus and all the vegetables into a wide pan. Now, add all the seasoning ingredients: soy sauce, cooking wine, gochujang, gochugaru, oligosaccharide, and optional minced garlic. Stir-fry over high heat, quickly tossing to ensure the seasoning coats the octopus and vegetables evenly. Be careful not to burn the seasoning while mixing.

Step 3

Step 4

Once all ingredients are well combined, reduce the heat to medium and let it simmer for about 15 to 20 minutes, either covered or uncovered. Stir occasionally to allow the sauce to thicken and the ingredients to cook through until tender. Your delicious stir-fried octopus is now ready! Serve it over a bowl of hot rice or enjoy it with crispy seaweed flakes for an amazing meal.
