Main Ingredients

  • 2 cleaned octopuses
  • 1 handful of Korean green peppers (approx. 100g)

Seasoning Ingredients

  • 3 Tbsp soy sauce
  • 1 Tbsp corn syrup (or oligosaccharide)
  • 1/2 Tbsp minced garlic
  • A little canola oil (for stir-frying)

Cooking Instructions

Step 1

First, wash the octopus thoroughly under running water. Blanch the octopus in boiling water for about 1 minute. This step helps to tenderize the octopus and remove any impurities.

Step 1

Step 2

Rinse the blanched octopus in cold water to cool it down, then slice it into bite-sized pieces (about 2-3 cm). Be careful not to cut them too small, as they will shrink when cooked.

Step 2

Step 3

Remove the stems from the Korean green peppers and wash them thoroughly under running water. Removing the stems makes them easier to handle during cooking and ensures all dirt is washed away.

Step 3

Step 4

Slice the washed green peppers in half lengthwise, or cut them diagonally into bite-sized pieces. Place them in a bowl.

Step 4

Step 5

Rinse the sliced green peppers several times in cold water. This process removes seeds and any remaining bits inside, which helps to reduce bitterness and results in a cleaner taste. After rinsing, drain them well in a colander.

Step 5

Step 6

Heat a little canola oil in a lightly oiled pan over medium-low heat. Add the drained green peppers and 3 Tbsp of soy sauce. Stir-fry for 1-2 minutes until the peppers are coated and start to absorb the soy sauce. Avoid overcooking, as the peppers can become too soft.

Step 6

Step 7

Once the green peppers are slightly tender, add the prepared octopus, 1/2 Tbsp of minced garlic, and 1 Tbsp of corn syrup. Stir everything together gently to coat all ingredients evenly.

Step 7

Step 8

Continue to stir-fry for another 1-2 minutes until the octopus is cooked through and all ingredients are well combined. Finally, sprinkle with sesame seeds for garnish. Your delicious stir-fried octopus with Korean green peppers is ready to be enjoyed with freshly cooked rice!
