Pork Marinade

  • 2 Tbsp aromatic liquid (e.g., ginger juice, garlic juice)
  • 1 Tbsp minced garlic
  • 1 Tbsp plum extract (maesilcheong)
  • 2 Tbsp mirin (cooking wine)
  • 2 Tbsp cheongju (rice wine)

Seasoning Sauce

  • 2 Tbsp all-purpose soy sauce (or regular soy sauce)
  • 3 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp mixed syrup (e.g., corn syrup, rice syrup)
  • 1 Tbsp minced green onion
  • 1 green chili pepper
  • 1 red chili pepper
  • 1 Tbsp sesame oil
  • Sesame seeds, for garnish
  • Pinch of black pepper

First, pat the thinly sliced pork shoulder dry with paper towels to remove excess blood. This step is crucial for a clean taste without gamey odors. Cut the pork into bite-sized pieces.
