Cooking Instructions
Step 1
First, cut the pork shoulder into bite-sized pieces. The key to great Jeyuk Bokkeum is tender meat with no gamey odor, so marinating is essential. In a bowl, combine the pork with 1 Tbsp soy sauce, 1/2 Tbsp ginger juice, 1 Tbsp cooking wine, 1 Tbsp minced garlic, and a pinch of black pepper. Gently mix everything together and let it marinate for about 30 minutes. This step tenderizes the meat and removes any unwanted smells.
Step 2
While the pork is marinating, prepare your vegetables. Slice the onion thinly and cut the green onion diagonally. (Optional: Thinly slice some green or red chili peppers for extra flavor and color.)
Step 3
Now, let’s make the golden ratio sauce that will define the flavor of your Jeyuk Bokkeum. In a separate bowl, combine 2 Tbsp gochujang, 2 Tbsp soy sauce, 3 Tbsp gochugaru, 2 Tbsp sugar, 2 Tbsp oligodang, 1 Tbsp cooking wine, and 1 Tbsp minced garlic. Mix well. This balanced sauce is so good, you won’t need any other seasonings! It’s also great to make ahead for camping trips or picnics.
Step 4
Heat 1 Tbsp of cooking oil in a large skillet or wok over high heat. Add the marinated pork and stir-fry until it’s almost cooked through. In the past, people often marinated the pork in the sauce first and then stir-fried it, which could lead to burning or sticking. With this recipe, we’re adding the sauce later, so no worries!
Step 5
When the pork is about 80% cooked, add all the prepared sauce to the skillet. Continue to stir-fry quickly over high heat, ensuring the sauce coats the pork evenly. Stir-frying rapidly is crucial at this stage to prevent the sauce from burning.
Step 6
Once the pork and sauce are well combined and cooked, add the prepared vegetables. Stir-fry briefly, just until the vegetables are slightly tender but still retain a pleasant crunch. This keeps them fresh and vibrant.
Step 7
Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with 1 tsp of toasted sesame seeds for a fragrant finish. This completes your delicious Jeyuk Bokkeum!
Step 8
Your spicy and sweet Jeyuk Bokkeum is ready! The combination of tender pork, crisp vegetables, and that perfectly balanced sauce is absolutely delightful. It’s wonderful served over rice or wrapped in lettuce. Enjoy the clean, savory flavor with no gamey notes!
