Main Ingredients

  • 400g pork shoulder or front leg, sliced for stir-frying
  • 1 medium onion
  • 1 large green onion (scallion)

Seasoning Ingredients

  • 2 Tbsp sugar (adjust to taste)
  • 2 Tbsp soy sauce (or seasoned soy sauce)
  • 1 Tbsp gochujang (Korean chili paste, heaping)
  • 2 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
  • 1 Tbsp minced garlic
  • 1/2 cup water (measured with a paper cup)

Cooking Instructions

Step 1

① First, prepare the vegetables. Chop the green onion into large pieces to enhance its flavor, and slice the onion into bite-sized strips.

Step 1

Step 2

② Heat a frying pan over medium-high heat. Add the pork and stir-fry until about 2/3 of the meat is cooked and the surface turns white. If there’s excess oil from the pork, you can gently pat it dry with a paper towel for a leaner dish.

Step 2

Step 3

③ Once the pork is partially cooked, add 2 Tbsp of sugar and stir-fry for about 30 seconds until the sugar dissolves. This step adds a sweet caramelized flavor, making the pork even richer.

Step 3

Step 4

④ Now it’s time to add the seasonings. Pour 2 Tbsp of soy sauce along the edges of the pan to release its aroma as you stir-fry.

Step 4

Step 5

⑤ Add 2 Tbsp of gochugaru (Korean chili flakes) and stir-fry to combine it well with the pork and other seasonings. Stir-frying the chili flakes first helps develop their color and flavor without a dry taste.

Step 5

Step 6

⑥ Add 1 Tbsp of gochujang (Korean chili paste) and stir vigorously to dissolve any lumps, mixing it with the pork. This is the key ingredient for the spicy kick.

Step 6

Step 7

⑦ Finally, add 1 Tbsp of minced garlic and stir-fry for about 30 seconds until fragrant. The garlic aroma helps eliminate any gamey smell from the pork, making it even more delicious.

Step 7

Step 8

⑧ Pour in 1/2 cup of water (measured with a paper cup) and let it simmer to allow all the seasonings to meld together. Make sure to adjust the heat to prevent the sauce from burning.

Step 8

Step 9

⑨ When the sauce has reduced by about half, add the prepared green onion and onion.

Step 9

Step 10

⑩ Stir-fry until the onions turn translucent and soften, and the vegetables are tender. Cooking over high heat quickly at this stage will help maintain the crispness of the vegetables.

Step 10

Step 11

⑪ Once all ingredients are cooked through and the sauce has evenly coated everything, your delicious Jeyuk Bokkeum is ready! It’s absolutely delightful served over a bowl of warm rice.

Step 11

Step 12
