Cooking Instructions
Step 1
Let’s start by preparing the ingredients for our delicious Jeyuk Bokkeum. You’ll need 520g of pork, sliced thinly for stir-frying. Thinly slice 1 onion, and cut 1 green onion into diagonal pieces. Having all your ingredients prepped makes the cooking process much smoother.
Step 2
Now, let’s make the special sauce that will give our Jeyuk Bokkeum its amazing flavor! In a bowl, combine 3 tablespoons of gochujang, 2 tablespoons of gochugaru, and 5 tablespoons of soy sauce for that savory depth.
Step 3
Next, add 1 tablespoon of minced garlic to help tenderize the pork and add a pungent aroma. For sweetness and a glossy finish, add 2 tablespoons of sugar and 1 tablespoon of corn syrup. Finally, stir in 2 tablespoons of mirin (or cooking wine) to further enhance the flavors and 1 tablespoon of perilla oil (or sesame oil) for a nutty fragrance. Whisk everything together until well combined.
Step 4
Add the prepared pork to the sauce mixture and mix well with your hands, ensuring each piece is coated evenly. Let the pork marinate for a short while. Just before cooking, toss in the sliced onion and green onion with the marinated pork. Mixing the vegetables in at the end helps them retain a bit of crispness and prevents them from releasing too much water too early.
Step 5
Heat a pan over medium-high heat. Add the marinated pork and vegetables and stir-fry until the pork is cooked through and the vegetables are tender. Reduce the heat to medium and continue to stir to prevent burning. If you have any leftover marinated pork, store it in an airtight container in the freezer and it’s best consumed within a week for optimal freshness and flavor.
Step 6
Transfer the perfectly cooked Jeyuk Bokkeum to a serving plate. Garnish if desired. Serve hot with rice and enjoy! It’s also fantastic wrapped in fresh lettuce leaves with a dab of ssamjang.
