- Pork belly 500g
- 1 Squid
- 1 Onion
- 1 Green onion
Cooking Instructions
Step 1
First, prepare the squid thoroughly. If using frozen squid, rinse it under cold water. For the body, cut it in half lengthwise, then score it diagonally with a knife. Cut it into bite-sized pieces. For the tentacles, remove any rough membrane and cut them into manageable sizes.
Step 2
Thickly slice the green onion diagonally. Slice the onion into thick strips. Cutting the vegetables into larger pieces adds a pleasant texture when eating.
Step 3
Place the prepared squid and sliced onion in a bowl. Add 1 tsp of sugar and gently knead them together. (This step is optional but helps tenderize the squid by drawing out some moisture.)
Step 4
Add the sliced green onion (for the seasoning part), minced garlic, and gochugaru to the bowl. Knead again to ensure the ingredients are well coated with the seasonings.
Step 5
Add the soy sauce and fish sauce, and gently mix. Finally, add the sesame oil and toasted sesame seeds, and give it a light mix. (Tip: If preparing the seasoning mixture in advance, you can store the green onions separately and add them just before cooking to maintain their fresh aroma. However, if you’re cooking immediately, mixing everything at this stage is perfectly fine.)
Step 6
Heat a pan over medium-high heat and add the pork belly. Cook until it’s nicely browned and crispy, as many people prefer it this way. If there’s excessive oil, you can carefully drain some of it off with a paper towel or by tilting the pan.
Step 7
Once the pork belly is cooked and golden brown, add the marinated squid to the pan. Stir-fry over high heat for a short time to prevent the squid from becoming tough.

Continue to stir-fry, ensuring the squid seasoning evenly coats the pork belly. A generous amount of seasoning is key for a flavorful O-sam Bulgogi. Your delicious O-sam Bulgogi is now ready!
