Spicy and Sweet Stir-fried Squid Recipe

  • 1/4 head of cabbage
  • 1 onion
  • A bit of carrot
  • 3 Korean green chili peppers
  • 1 red chili pepper
  • 1 stalk of green onion

Seasoning Ingredients

  • 1.5 Tbsp sugar
  • 1 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 5 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 1/2 cup water

Cooking Instructions

Step 1

First, clean and prepare the squid. Slice the body into rings of a good bite-size. To clean the tentacles, gently pull them while wiggling them to remove the innards without cutting them off from the body. This method helps maintain a nice shape and tender texture when cooked.

Peel the onion and carrot, then slice them into strips about 0.5 cm thick. Remove the stems from the Korean green chili peppers and red chili pepper, then slice them diagonally. Slice about half of the green onion stalk diagonally as well.

Finely mince the remaining half of the green onion. Minced green onion will be used to create fragrant green onion oil, which deepens the flavor of the stir-fried squid.

Cut the cabbage into large, roughly 2-3 cm pieces. Avoid cutting them too small, as they will become mushy when cooked; larger pieces retain a pleasant crunch. Wash the cabbage thoroughly and pat it dry before cutting.

Let’s make the sauce for the stir-fried squid in advance. In a bowl, combine 1 Tbsp gochujang, 3 Tbsp gochugaru, 5 Tbsp soy sauce, and 1 Tbsp minced garlic. Mix well. (We’ll add the sugar, sesame oil, and water in the final step.)

Heat 3 Tbsp cooking oil in a wide pan over medium heat. Add the minced green onion and stir-fry slowly until fragrant and lightly golden. This process creates aromatic green onion oil.

Once the green onion oil is ready, add the prepared squid to the pan. Immediately sprinkle 1.5 Tbsp of sugar over the squid. The sugar helps tenderize the squid and prevents it from releasing too much moisture.

When the squid starts to cook and change color with the sugar, add the pre-made sauce and 1/2 cup of water. Stir quickly to combine everything. Be careful not to burn the sauce; a swift stir-fry is best.

Now it’s time to add the prepared vegetables. Toss in the cabbage, diagonally sliced green onion, onion, Korean green chili peppers, and red chili pepper. Stir-fry them together with the squid.

The vegetables are added last to maintain their crisp and fresh texture. Even though it looks like a lot of vegetables now, they will shrink as they cook down with the squid, so don’t worry!

Finally, drizzle in 1 Tbsp of sesame oil and give everything one last quick stir to finish. Turn off the heat immediately to preserve the nutty aroma of the sesame oil.
