Making Delicious Stuffed Green Pepper Pancakes with Fresh Green Peppers
I’ve been really enjoying cooking lately! The weather is just perfect for it – not too hot, just right for some kitchen fun. Today, I’ve made some delightful stuffed green pepper pancakes, highlighting the crisp texture and vibrant flavor of fresh green peppers.
Pancake Ingredients- 2 green peppers
- 15g tofu
- 4cm white part of green onion
- 1 clove garlic
- 1 egg
- 30g ground beef
- 15g all-purpose flour
Meat Filling Seasoning- Pinch of salt
- Pinch of sugar
- Pinch of sesame oil
- Pinch of chopped green onion
- Pinch of minced garlic
- Pinch of black pepper
- 1 pinch sesame seeds
- Pinch of salt

Cooking Instructions
Step 1
First, wash the green peppers thoroughly under running water. We’ll cut them in half lengthwise and remove the seeds.
Step 2
Using a spoon, carefully scrape out the seeds and the white pith from inside the peppers. Rinse them again under running water to ensure all seeds are removed. Make sure to pat them dry completely.
Step 3
Cut the deseeded green peppers into 5cm (about 2 inches) lengths. Trimming off the stem and tip ends will give them a neater appearance.
Step 4
Bring a pot of water to a boil with a pinch of salt. Blanch the green peppers for a short time until they turn a vibrant green. Immediately transfer them to an ice bath to cool them down. This step helps retain their crispness.
Step 5
Finely mince the white part of the green onion and the garlic. We’ll add these to the meat filling, so mince them enough to provide flavor without being overpowering.
Step 6
While the green peppers are cooling, prepare the ground beef. If your ground beef is in a block, spread it out thinly to make it easier to mince.
Step 7
Mince the ground beef finely using a knife or a food processor. Be careful not to over-process if using a machine, as it can become too mushy.
Step 8
Wrap the tofu in a cheesecloth or paper towel and squeeze out as much water as possible. Then, mash it thoroughly with the back of a knife or until it’s a smooth paste.
Step 9
Combine the finely minced beef and the mashed tofu. Knead the mixture thoroughly until it becomes sticky and cohesive, similar to sausage filling. This ensures the filling holds its shape.
Step 10
In a bowl, prepare the seasoning: add a pinch of salt, a pinch of sugar, a pinch of sesame oil, minced green onion, minced garlic, a pinch of black pepper, and one pinch of sesame seeds.
Step 11
Add the prepared seasoning to the beef and tofu mixture. Mix everything together thoroughly, kneading it well to ensure the seasoning is evenly distributed.
Step 12
Take the blanched green peppers out of the water and ensure they are completely dry. Lightly dust the inside of each pepper half with flour. This will help the meat filling adhere better.
Step 13
Generously stuff the inside of each green pepper half with the meat filling, filling it up to the top edge. Avoid overstuffing, as it might make cooking difficult.
Step 14
Lightly dust the side of the pepper that has the filling with flour. This will help the egg wash stick better.
Step 15
In a separate bowl, whisk the egg with a pinch of salt. Heat a lightly oiled pan over low heat. Place the stuffed peppers, filling-side down, into the pan. Gently press them down. Cook until the egg coating is golden brown.
Step 16
Once the filling side is golden brown, carefully flip the peppers and roll them so the green skin side also gets lightly browned. Cook until both sides are nicely colored and the filling is cooked through.
