Eoriguljeot Ingredients
- Fresh oysters 500g
- Coarse salt 3 Tbsp (for brining)
- Kkanari fish sauce 3 Tbsp
- Red pepper flakes 4 Tbsp
- Oligosaccharide 0.5 Tbsp
Cooking Instructions
Step 1
Prepare the fresh oysters. If they are still in their shells, remove the oyster meat and wash it thoroughly.
Step 2
After washing, drain the oysters in a colander as much as possible. This step is important, as too much water can dilute the flavor of the fish sauce.
Step 3
Gently rinse the oysters one more time. Be careful not to rub too hard, as this can break the oyster meat.

This is a crucial step to thoroughly drain the water from the cleaned oysters. Rinsing several times and ensuring minimal water content will significantly impact the final taste of your Eoriguljeot.
Step 5
Sprinkle 3 tablespoons of coarse salt evenly over the drained oysters. The salt will draw out the moisture, creating a savory and rich flavor. Let the oysters sit for about 30 minutes to brine.

After 30 minutes, the oysters will release water due to osmosis. Discard this salty brine. Rinse the oysters lightly under cold running water to remove any excess salt. Be careful not to rinse for too long.

Drain the oysters thoroughly again using a colander, then place them in a bowl. Add the Kkanari fish sauce, red pepper flakes, and oligosaccharide. Gently mix everything together until the seasoning coats the oysters evenly.
