Main Ingredients- 1 can (150g) tuna
- 1 potato
- ¼ carrot
- ½ onion
- 2 Korean green chili peppers (cheongyang peppers)

Step 1
First, open the can of tuna and drain the oil into a separate small bowl. Don’t discard this tuna oil; we’ll use it for stir-frying later! Set the drained tuna aside.

Wash and prepare your leftover vegetables. Peel the potato, carrot, and onion, then dice them into approximately 1cm cubes. Finely mince the Korean green chili peppers; this will distribute their spicy flavor evenly throughout the dish.

Let’s make the delicious sauce! In a small bowl, combine 2 tablespoons of gochujang, 1 tablespoon of ketchup, and 1 tablespoon of corn syrup. Stir everything together with a spoon until well combined to create a perfect balance of sweet and spicy flavors.

Heat the reserved tuna oil in a pan over medium heat. Add the diced potato, carrot, and onion. Stir-fry for about 3-5 minutes, or until the vegetables become tender and slightly translucent. Sautéing them first will bring out their natural sweetness.

Once the vegetables are partially cooked, pour the prepared sweet and spicy sauce into the pan. Stir well with a spatula to coat the vegetables evenly with the sauce, and continue to cook for another 1-2 minutes.

Now, add the drained tuna to the pan. Be careful not to overcook the tuna, as it can become dry and lose its tender texture. Gently stir it into the sauce and vegetables for just about 30 seconds to 1 minute. The key is to warm the tuna through without cooking it further.
