Main Ingredients

  • 1 can Whelks (approx. 150-200g)
  • 1/3 head Lettuce
  • 1/2 Onion
  • 1/2 stalk Green Onion

Seasoning Ingredients

  • 4 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic (approx. 2 cloves)
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Vinegar
  • 1 Tbsp Honey (or corn syrup)
  • 1 Tbsp Sugar
  • 1 Tbsp Sesame Oil
  • Pinch of Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, drain the liquid from the can of whelks and cut them into bite-sized pieces (halves or thirds). Wash the lettuce, pat it dry, and thinly shred it. (Tip: If you have other vegetables like cucumber, carrot, or bell pepper, shred them and add them for a more colorful and abundant whelk salad!) Boil the chewy noodles according to package directions, then quickly rinse them under cold water and drain.

Step 1

Step 2

Thinly slice the onion and chop the green onion diagonally or finely. Prepare 1 tablespoon of minced garlic. In a bowl, combine the drained whelks, shredded onion, green onion, and lettuce. (Tip: Making the seasoning sauce in advance and letting it chill in the refrigerator for 30 minutes to an hour can help neutralize the whelks’ unique smell and enhance the sauce’s flavor. If you have time, definitely try this resting step!)

Step 2

Step 3

Pour the prepared seasoning sauce (or mix the seasoning ingredients directly in the bowl: 4 Tbsp Gochujang, 2 Tbsp Gochugaru, 1 Tbsp Minced Garlic, 1 Tbsp Soy Sauce, 2 Tbsp Vinegar, 1 Tbsp Honey, 1 Tbsp Sugar) over the whelks and vegetables. Gently mix everything together with chopsticks or your hands, tossing rather than stirring vigorously to avoid mushing the vegetables.

Step 3

Step 4

Finally, drizzle in 1 tablespoon of sesame oil and mix lightly one more time. Taste and if you prefer it sweeter, add a little more honey or corn syrup. Garnish with sesame seeds if desired, then plate it beautifully. Your delicious spicy and sweet whelk and chewy noodle salad is ready!
