In a bowl, combine Gochujang (1 Tbsp), Gochugaru (1 Tbsp), soy sauce (1/2 Tbsp), sugar (1/2 Tbsp), vinegar (1 Tbsp), oligosaccharide (2 Tbsp), minced garlic (1/2 Tbsp), sesame oil (1 Tbsp), and Dashida (1/2 tsp). Mix thoroughly with a spoon until all the ingredients are well incorporated. Letting the sauce sit for a bit will allow the flavors to meld beautifully.

Now, it’s time to cook the somen noodles. Bring a generous pot of water to a rolling boil. Once boiling, add the somen noodles. If the water starts to foam and rise towards boiling over, add a ladleful of cold water to help it settle. Repeat this process once or twice more. Refer to the noodle packaging for cooking time, but for a nicely chewy texture, aim to cook them for about 1-2 minutes less than the suggested time.
