  • 3 Tbsp Vinegar
  • A pinch of Sesame Seeds
  • A pinch of minced Garlic

First, rinse the fresh gizzard shad thoroughly under running water. Use a knife to remove the scales, and then clean out the head and innards. Make a slit along the belly of the fish to help with filleting, and then carefully create fillets.
