Main Ingredients

  • 3 Korean pickled cucumbers (Oiji)

Seasoning

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 2 Tbsp chopped green onion
  • 1 tsp sesame seeds
  • 1 Tbsp sesame oil
  • 1 tsp 3x concentrated vinegar
  • 1 Tbsp Oligodang (corn syrup or rice syrup)

Cooking Instructions

First, rinse the Korean pickled cucumbers (Oiji) thoroughly under running water. This step removes any surface impurities.

Slice the rinsed Oiji thinly, about 2mm thick. Slicing them not too thick ensures they absorb the seasoning well and have a pleasant texture.

Since Oiji is a preserved food, it can be quite salty. Pour enough fresh water to cover the sliced Oiji and let it soak for a bit. This helps to moderate the saltiness to a desirable level.

Using both hands, squeeze out the excess water from the Oiji firmly. Removing as much water as possible will prevent the salad from becoming watery and allow the seasoning to penetrate better.

Now it’s time to add the delicious seasonings. To the squeezed Oiji, add 1 Tbsp Gochugaru (Korean chili flakes), 1 Tbsp minced garlic, 2 Tbsp chopped green onion, 1 tsp sesame seeds, 1 Tbsp sesame oil, 1 tsp 3x concentrated vinegar, and 1 Tbsp Oligodang (corn syrup or rice syrup) for a touch of sweetness. Combine all the seasoning ingredients.
