Main Ingredients

  • 4 fresh squid
  • 5 leaves of crisp butter lettuce (Albaechu)
  • 10 leaves of aromatic perilla leaves (Kkaennip)
  • 1 cucumber
  • 1/2 onion
  • 1 green chili pepper

Cooking Instructions

Step 1

First, tear the fresh butter lettuce into bite-sized pieces by hand. For the perilla leaves, roll them up and thinly slice them to preserve their aroma. Cut the cucumber into thick julienne strips, and thinly slice the onion. Remove the seeds from the green chili pepper and chop it finely to add a hint of spice. Wash all the vegetables (butter lettuce, perilla leaves, cucumber, onion, green chili) thoroughly and drain them well in a colander. This prevents the seasoned dish from becoming watery. Clean the squid by removing the innards and cartilage. Blanch the squid in boiling water for about 1 minute and 30 seconds. Be careful not to overcook, as it can become tough!

Step 2

While the squid is blanching, place all the prepared vegetables (butter lettuce, perilla leaves, cucumber, onion, green chili) into a large bowl. Once the squid is blanched, immediately rinse it under cold water to stop the cooking process. Then, cut the squid into bite-sized pieces and add it to the bowl with the vegetables. This ensures the seasoning will be evenly distributed for maximum flavor.

Step 3

Now it’s time for the delicious seasoning! To the bowl containing the vegetables and squid, add 1 tablespoon of fine chili powder and 5 tablespoons of the spicy and sweet gochujang-based sauce (using a regular tablespoon for measurement). If you prefer a sweeter taste, you can add 1 tablespoon of sugar. For a nutty aroma, add 2 tablespoons of sesame oil and a pinch of toasted sesame seeds. Once the seasoning is ready, gently mix everything together with your hands. It’s important to toss the ingredients softly to avoid mashing them, ensuring the seasoning coats everything evenly. And voilà! Your refreshing, spicy, and tangy stir-fried squid is ready. It’s delicious right away, or you can chill it in the refrigerator for a while for an even cooler treat.
