When you’re wondering what to cook on a gloomy, wet day, here’s a simple and quick recipe for braised mackerel using canned fish and kimchi. All you need are canned mackerel and well-fermented kimchi to create a satisfying meal. Main Ingredients- 1 can Canned Mackerel
- 1/4 head Well-fermented Kimchi (about 2 paper cups)
- 2 Tbsp Perilla Oil
- 1 cup Hot Water (for removing fishy smell)
- 2 cups Vegetable broth or Anchovy-Kelp broth
Cooking Instructions
Step 1
In a pot, add the kimchi cut into bite-sized pieces. Drizzle with 2 tablespoons of perilla oil. Stir-fry over medium-low heat for 5-7 minutes until fragrant, being careful not to burn the kimchi. This step enhances the kimchi’s flavor and adds depth.
Step 2
Drain the liquid from the canned mackerel using a sieve. (You can use a little of the canned liquid if you prefer, but be cautious as it might impart a fishy taste.)
Step 3
Lightly rinse the mackerel under running water, then pour 1 cup of hot water over the fish. This process helps to remove any fishy odor and excess oil, resulting in a cleaner taste.

Add 1 tablespoon of gochugaru to the sautéed kimchi in the pot to achieve a vibrant color. It will blend beautifully with the red hue of the kimchi, creating a more appetizing dish.
