The harmonious blend of savory small dried anchovies and deeply fermented aged kimchi, enhanced by the nutty aroma of perilla oil, creates an unforgettable taste. For an even deeper umami flavor, consider using larger dried anchovies (for broth) – just remember to remove their bitter guts. Even with small dried anchovies, the result is wonderfully delicious.   • 5-7 sheets of aged kimchi, cut into bite-sized pieces
  • 10-15 small dried anchovies (heads and guts optionally removed)
  • 10 dried anchovies for broth (optional, remove guts for less bitterness)

Cooking Instructions

Step 1

First, gently rinse the aged kimchi under running water to adjust its sourness, then cut it into bite-sized pieces, about 2-3 cm. Prepare about 10-15 small dried anchovies. Since small dried anchovies are tiny, you don’t necessarily need to remove their heads or guts. However, if you are using dried anchovies meant for broth, it’s recommended to remove their guts to eliminate any bitterness.

Now, let’s prepare the seasoning for stir-frying the aged kimchi. While sesame oil is typically used for kimchi stir-fries, today we’re using fragrant perilla oil for a special touch. Perilla oil adds a smoother finish and a deeper, richer flavor. In a pan, combine 1 Tbsp perilla oil, 0.5 Tbsp gochujang, and 0.5 Tbsp sugar. Add the cut aged kimchi and the small dried anchovies. Then, pour in 100mL of water and 2 Tbsp of aged kimchi brine. Stir everything together well. Now, simply bring it to a boil over medium heat, and you’ll have a delicious aged kimchi stir-fry made easily.

Stir-fry over medium heat for about 25 minutes. Aged kimchi is softer than regular kimchi due to its longer fermentation. Therefore, even after about 20 minutes of cooking, the sauce will reduce to a nice consistency, and the flavors will meld beautifully into the ingredients. Stir occasionally to prevent sticking.
