My dad tasted this kimbap somewhere and absolutely loved its addictive flavor! He wanted to have it again, so I decided to make this Cheongyang Pepper Kimbap. The sharp spiciness and savory notes combine to create a special kimbap that everyone, young and old, will enjoy.

Kimbap Ingredients

  • 2 servings of freshly cooked warm rice
  • 1/2 sheet of kimbap seaweed for rolling
  • 3-5 Cheongyang peppers (adjust to your spice preference)
  • 2 sheets of kimbap seaweed (cut into 4 pieces each for rolling)
  • 1/4 carrot

Spicy Seasoning Sauce

  • 5 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1 Cheongyang pepper (very finely minced)
  • 3 Tbsp water

First, carefully prepare all the ingredients for your Cheongyang Pepper Kimbap. Peel the carrot and remove the stems from the Cheongyang peppers. Wash them thoroughly and set aside.

Finely mince the kimbap ham for a pleasant texture. Lightly oil a pan and sauté the minced ham over medium-low heat until golden brown; this enhances its flavor. Mince the carrot and Cheongyang peppers similarly and set them aside.

Now, let’s make the spicy seasoning sauce that will define the flavor of your kimbap. For about two servings of rice, combine 5 Tbsp soy sauce, 1 Tbsp sugar, 1/2 Tbsp minced garlic, and 1 very finely minced Cheongyang pepper for that extra kick and texture. Add 3 Tbsp water and mix well. Bring to a simmer in a saucepan over medium-low heat, then reduce to low heat and cook until the sauce thickens slightly.

In a large bowl, combine the two servings of freshly cooked warm rice with the prepped minced ham, minced carrot, and minced Cheongyang pepper. Mix the ingredients evenly.
