  • 1 Coin-shaped stock cube
  • 2.5 tsp Korean soup soy sauce (Gukganjang)
  • 1 tsp Gochugaru (Korean red pepper flakes)
  • 500ml Water

Cooking Instructions

Step 1

Cut the assorted leftover holiday jeon into bite-sized pieces. This includes varieties like cabbage jeon, green onion jeon, sweet potato jeon, skewer jeon, pollack jeon, yukjeon, donggeurang ttaeng, and shrimp tempura – any leftover jeon can be delicious in this stew.

Step 1

Step 2

Finely chop the green onions, Korean green chili peppers (for a spicy kick), and red chili pepper (for color). These will add freshness and flavor to the stew.

Step 2

Step 3

In a pot, add 1 coin-shaped stock cube and 500ml of water to start making the broth.

Step 3

Step 4

Once the water comes to a rolling boil, add the dried seafood and continue to boil vigorously. This step helps to create a rich and clear broth. You can use store-bought dried anchovies or kelp for convenience.

Step 4

Step 5

Carefully place the cut assorted jeon into the boiling broth. Then, add 2.5 teaspoons of Korean soup soy sauce to season the stew. You can adjust the soy sauce amount to your taste after tasting.

Step 5

Step 6

Add 1 teaspoon of gochugaru (Korean red pepper flakes) to give the stew its characteristic spicy flavor. Feel free to adjust the amount of gochugaru based on your preferred level of heat.

Step 6

Step 7

Once the stew is simmering and the broth has reduced slightly, add the chopped green onions, Korean green chili peppers, and red chili pepper. Simmer for another minute until the vegetables are just tender. Turn off the heat, and your delicious and spicy assorted jeon stew is ready! Enjoy this hearty meal with a bowl of rice.
