Main Ingredients- 1 handful beef for soup (approx. 100-150g)
- 2 handfuls daikon radish (approx. 200-300g)
- 2 handfuls soybean sprouts (approx. 100-150g)
Cooking Instructions
Step 1
First, gently pat the beef dry with paper towels to remove excess blood. Place the beef in a pot and season with a pinch of salt and pepper. Stir-fry over medium-high heat until the beef is browned on all sides, which helps develop its flavor.
Step 2
Once the beef is browned, add the peeled and cut daikon radish (cut into bite-sized pieces, about 2-3cm thick) to the pot. Continue to stir-fry for at least 5 minutes. Stir-frying the radish thoroughly helps to reduce its bitterness and bring out its natural sweetness. If the radish tastes particularly astringent, you can add about a teaspoon of sugar while stir-frying to mellow it out.
Step 3
After stir-frying the beef and radish, pour in the water or rice water and bring it to a boil. Once the soup starts boiling, stir in the gochugaru (Korean chili flakes), soup soy sauce, fish sauce, and minced garlic. Mix well to dissolve the seasonings. This step builds the foundation for a rich, spicy flavor.
Step 4
Wash the soybean sprouts thoroughly under running water. You can trim off any roots or dark ends if you prefer. Adding them later helps to maintain their crisp texture.

When the radish becomes translucent and tender, it’s time to add the prepared soybean sprouts and the thinly sliced green onion. The soybean sprouts will add a refreshing element without any fishy odor, and the green onion will contribute a fragrant aroma, enhancing the soup’s overall taste.
Step 6
Once the soybean sprouts are cooked (they will wilt slightly), the soup is almost ready. Finally, season with salt to your preference. Taste and add more salt gradually until it’s just right. A final sprinkle of black pepper will add an extra kick of flavor. Serve hot with a bowl of rice for a truly satisfying meal!
