How to Make Delicious Spicy Beef and Radish Soup
While classic beef and radish soup is refreshing and mild, this spicy version offers a kick that’s perfect for colder days. It’s both invigorating and comforting, making it an ideal dish to warm you up.
Main Ingredients
- 100g Beef for soup (e.g., brisket or stewing cut)
- 1 piece Radish (approx. 200-300g)
- 1 handful Bean Sprouts (approx. 50g)
- 1 stalk Green Onion
- 1 Korean Green Chili Pepper
- 1 Red Chili Pepper
- 1/2 Onion
- 3 cloves Garlic, minced (or 1 Tbsp)
Seasoning
- 2 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp Guk-ganjang (Korean soup soy sauce)
- Salt to taste

Cooking Instructions
Step 1
Wash all vegetables thoroughly. Slice the radish thinly on the bias or dice it into bite-sized pieces. Slice the onion thinly, and diagonally slice the green and red chili peppers, removing the seeds. Chop the green onion finely, and mince the garlic. Rinse the bean sprouts and drain.
Step 2
In a deep pot, add the sliced radish. Stir in 1 tablespoon of gochugaru and 1 tablespoon of guk-ganjang. Sauté over medium heat until the radish becomes slightly translucent. This process draws out the radish’s refreshing flavor and reduces any bitterness from the chili powder.
Step 3
Add the beef and stir-fry until it’s no longer pink. Browning the meat slightly at this stage will result in a cleaner and more flavorful broth.
Step 4
Pour in 6-7 cups (approx. 1.2-1.4L) of water and bring to a boil over high heat. Once boiling, reduce the heat to medium-low. Add the bean sprouts and cover the pot. Simmer for 5-7 minutes. Adding bean sprouts later helps prevent them from becoming mushy and losing their fresh flavor.
Step 5
When the bean sprouts are cooked, add the sliced onion, diagonally sliced chili peppers, minced garlic, and the remaining 1 tablespoon of gochugaru. Bring to a simmer again. Season with guk-ganjang and salt to your preference. Taste and adjust seasoning as needed. Finally, add the chopped green onion and simmer for another minute before turning off the heat. Your delicious and spicy beef and radish soup is ready!
