Main Ingredients- 150g beef (short ribs or thinly sliced for stir-fry)
- 1/2 onion
Spicy Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp spicy Gochugaru (Korean chili flakes)
- 1/2 Tbsp oyster sauce
- 1 Tbsp oligosaccharide (adjust sweetness)
- 1 tsp plum extract (for umami)
- 1 Tbsp cooking wine (to remove gamey odors)
- 1 tsp minced garlic
- Pinch of black pepper
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp spicy Gochugaru (Korean chili flakes)
- 1/2 Tbsp oyster sauce
- 1 Tbsp oligosaccharide (adjust sweetness)
- 1 tsp plum extract (for umami)
- 1 Tbsp cooking wine (to remove gamey odors)
- 1 tsp minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
In a bowl, combine the beef with all the spicy sauce ingredients (gochujang, gochugaru, oyster sauce, oligosaccharide, plum extract, cooking wine, minced garlic, and pepper). Mix well with your hands, ensuring the marinade coats the beef evenly. Let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld. If you’re short on time, you can stir-fry immediately after marinating, but a longer marination will yield a deeper flavor.
Step 2
For an extra layer of flavor, you can add about 1/2 Tbsp of chili oil to the pan. Heat the pan over medium-high heat, then add the marinated beef and begin to stir-fry. Cooking over high heat quickly prevents the meat from becoming tough and helps to develop a smoky ‘wok hei’ flavor. Stir constantly to prevent burning.
Step 3
Slice the onion into thick strips. Once the beef is partially cooked, add the sliced onion and stir-fry together. The sweetness of the onion complements the beef beautifully as it softens, adding another dimension of flavor. Continue to stir-fry over high heat, ensuring neither the beef nor the onion burns.
Step 4
Taste the mixture during cooking and adjust seasoning if needed by adding more sauce or a touch of oyster sauce. Since this is a rice bowl dish, a slightly saltier flavor is perfect when combined with the rice. The aroma of the cooking beef and onions is wonderfully appetizing. The onions should be tender and slightly sweet at this stage.
Step 5
Spoon the cooked beef and onion mixture generously over a bowl of warm rice. Garnish with fresh sprouts and a sprinkle of sesame seeds for a beautiful presentation and added texture. The tender beef, marinated in sauce and stir-fried over high heat for that hint of smokiness, creates a delicious and satisfying Spicy Beef Rice Bowl. Enjoy your homemade masterpiece!
