Spicy & Sweet Braising Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Soy sauce
  • 1.5 Tbsp Sugar (adjust to your preference)
  • 1 Tbsp Minced garlic
  • 2 Tbsp Water

Cooking Instructions

Step 1

Begin by preparing the enoki mushrooms. Trim the woody base of the enoki mushrooms with a knife. Then, gently separate the mushrooms into bite-sized clumps with your hands. This ensures even coating with the sauce and a pleasant texture.

Step 2

Lightly oil a heated pan. Add the prepared enoki mushrooms. After lightly patting dry any excess moisture from the mushrooms, quickly sear them over medium-high heat for about 30 seconds per side. This step helps to achieve a slightly chewy texture. Be careful not to overcook them at this stage.

Step 3

Once the enoki mushrooms are lightly browned, pour the pre-mixed braising sauce evenly over them in the pan. To make the sauce, combine gochujang, soy sauce, sugar, minced garlic, and water. Gently toss the mushrooms to ensure they are well-coated with the sauce.

Step 4

Now, continue to braise the mushrooms over medium-low heat for another 30 seconds per side, allowing the sauce to thicken and coat the mushrooms beautifully. Keep an eye on it to prevent burning. Once glazed and slightly reduced, your delicious spicy and sweet enoki mushroom dish is ready! It’s perfect served with warm rice or as a delightful snack with a cold drink.
