Spicy Braised Mackerel with Dried Radish Greens
Flavorful Mackerel Simmered with Radish and Dried Radish Greens – A Perfect Side Dish
I had intended to grill these salted mackerel fillets, but they’ve transformed into a wonderfully flavorful braised dish with dried radish greens! The combination of savory salted mackerel, tender radish greens, and crisp radish creates a dish so delicious it’s a guaranteed ‘rice thief’ – you’ll find yourself eating way more rice than usual. Main Ingredients- 1 salted mackerel fillet (cleaned)
- 1 cup radish (cut into cubes)
- 1 handful boiled dried radish greens (cut into bite-sized pieces)
- 1 stalk green onion (sliced diagonally)
Seasoning for Radish Greens- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 Tbsp Jin-ganjang (soy sauce)
- 1 Tbsp Mat-ganjang (savory soy sauce)
- 1 Tbsp sesame oil
Main Braising Sauce- 2 Tbsp Gochugaru (Korean chili powder)

- 2 Tbsp Mirin (rice wine)
- 1 Tbsp sugar or honey
- 1 cup water

- 1 Tbsp sesame oil

Cooking Instructions
Step 1
Gently rinse the salted mackerel fillet under running water. If you are using fresh mackerel, be sure to lightly salt it beforehand.
Step 2
Cut the boiled dried radish greens into bite-sized pieces. They add a wonderful texture.
Step 3
In a bowl, combine the cubed radish with 1/2 Tbsp Jin-ganjang (soy sauce) and 1/2 Tbsp minced garlic. Mix well to allow the radish to absorb the flavors. While pre-seasoning the radish enhances the flavor, it can be omitted if you’re short on time.
Step 4
To the cut dried radish greens, add 1 Tbsp Gochugaru, 1 Tbsp minced garlic, 1 Tbsp Jin-ganjang, 1 Tbsp Mat-ganjang, and 1 Tbsp sesame oil. Mix everything thoroughly and let it marinate for a bit to absorb the seasoning.
Step 5
Now, let’s prepare the main braising sauce. In a separate bowl, combine 2 Tbsp Gochugaru, 1 Tbsp Jin-ganjang, 2 Tbsp Mat-ganjang, 1 Tbsp minced garlic, 2 Tbsp Mirin, 1 Tbsp sugar (or honey), 1 cup water, a pinch of black pepper, and 1 Tbsp sesame oil. Whisk everything together until well combined.
Step 6
Finally, add the diagonally sliced green onion to the sauce and mix gently. The freshness of the green onion will add another layer of flavor to the dish.
Step 7
In a pot, spread the pre-seasoned radish at the bottom. Then, layer the marinated dried radish greens generously over the radish. Finally, arrange the salted mackerel fillets on top.

Pour the prepared main braising sauce evenly over the mackerel and radish greens. Make sure the sauce coats everything well, so the flavors can penetrate deeply.
Step 9
Cover the pot and simmer over medium-low heat for about 15-20 minutes, or until the radish greens and radish are tender and the sauce has thickened. This will result in a delicious braised salted mackerel with dried radish greens. Enjoy it with a hearty bowl of rice!
