Spicy Braised Pork Ribs (Sugar-Free)

Main Ingredients- 500g pork ribs, trimmed
- 1 large leek
- 1/2 onion
Seasoning Sauce- 3 Tbsp gochugaru (Korean chili flakes)
- 5 Tbsp soy sauce
- 2 Tbsp allulose (adjust sweetness to taste)
- 2 Tbsp minced garlic
- 0.5 Tbsp black pepper
- 500ml water
- 2 bay leaves
Garnish (Optional)- Sesame seeds, a pinch
- 3 Tbsp gochugaru (Korean chili flakes)
- 5 Tbsp soy sauce

- 2 Tbsp minced garlic
- 0.5 Tbsp black pepper
- 500ml water
- 2 bay leaves

Cooking Instructions
Step 1
First, prepare the vegetables for the pork ribs. Slice the leek into large, 2-3cm pieces. Cut the onion into similarly large chunks.
Step 2
Place the trimmed pork ribs in a pot. Add the 2 bay leaves for aroma and a pinch of black pepper.
Step 3
Pour enough water to cover the pork ribs completely. Bring to a boil over high heat and cook for 5 minutes to remove impurities and any gamey smell. This step ensures a cleaner taste.
Step 4
Rinse the blanched pork ribs thoroughly under cold running water. While the ribs are rinsing, mix all the seasoning sauce ingredients (gochugaru, soy sauce, allulose, minced garlic, black pepper, and water) in a bowl. Once the ribs are clean, add them to the pot with the mixed sauce and bring to a vigorous boil over high heat.
Step 5
Once the sauce has reduced by about half, add the sliced leeks and onions. Cover the pot and reduce the heat to medium-low. Let it simmer until the sauce is mostly reduced and the ribs are tender and well-coated with the glaze. Stir occasionally to ensure even cooking and flavor distribution.
Step 6
When the sauce has reached your desired consistency, turn off the heat. Arrange the delicious spicy pork ribs on a serving plate. Sprinkle with sesame seeds for a final touch. Your super simple, blood-sugar-friendly spicy pork ribs are ready to enjoy!
