Ingredients- 4 Tortillas
- 200g Chicken Tenderloin
- 1/2 Onion
- 1/2 Green Bell Pepper
- 1/2 Red Bell Pepper
- 50g Lettuce
- 1 Tomato
- 4 Slices American Cheese
- 4 Slices Mozzarella Cheese
- 30ml Olive Oil
- 5g Cajun Seasoning
- 50g Cajun Dressing
- Pinch of Salt
Cooking Instructions
Step 1
Thinly slice the chicken tenderloins by butterflying them, creating flat pieces. In a bowl, combine the chicken with 15ml olive oil and 5g Cajun seasoning. Mix well and let it marinate for about 10 minutes. Tear the lettuce into bite-sized pieces and soak them in cold water for 5 minutes. Drain thoroughly and pat dry with paper towels. Removing excess moisture is key to prevent the wrap from becoming soggy.
Step 2
Thinly slice the onion into approximately 0.2cm thick rings. Remove the seeds from the green and red bell peppers, then slice them to match the thickness of the onions. Slice the tomato into about 0.3cm thick rounds, after removing the stem.
Step 3
Heat a pan over medium heat. Place a tortilla in the pan and cook for about 30 seconds per side, just until lightly warmed and pliable. Don’t worry if the tortilla puffs up slightly; it will settle down as it cools. This step helps make the tortilla easier to roll and less likely to tear.
Step 4
Add the remaining 15ml of olive oil to the same pan and heat over high heat. Add the sliced onions and bell peppers and stir-fry for 1 minute and 30 seconds until slightly softened but still crisp. Season with a pinch of salt. Remove the vegetables and set aside on a plate. In the same pan, place the marinated chicken tenderloins and cook over medium heat for 2-3 minutes per side until golden brown and cooked through. If any liquid is released from the chicken, pat it dry with a paper towel to ensure the wrap doesn’t become soggy.
Step 5
Spread the Cajun dressing evenly over the warmed tortilla, leaving about a 1cm border around the edge. Layer the dried lettuce, followed by the tomato slices, American cheese, and mozzarella cheese. Place the cooked chicken tenderloins on top, followed by the sautéed onions and bell peppers. Fold the bottom edge of the tortilla slightly upwards, then fold in the sides, and finally roll it up tightly from the bottom.
Step 6
