  • 400g boneless chicken thigh, cut into bite-sized pieces
  • 1 cup tteokguk tteok (rice cake slices for soup), soaked in water
  • 1 cup shredded mozzarella cheese
  • 1/2 onion, thinly sliced
  • 1/2 green onion, diagonally sliced
  • 1 pack enoki mushrooms, trimmed and separated
  • 2 Korean green chilies (cheongyang peppers), finely chopped (adjust to spice preference)
  • A pinch of red chili, for color (optional)
  • A little cooking oil
  • Salt to taste
  • Black pepper to taste

Spicy and Sweet Sauce Ingredients

  • 2 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp gochujang (Korean chili paste)
  • 5 Tbsp soy sauce
  • 2 Tbsp mirin (rice wine)
  • 2 Tbsp minced garlic
  • A little ginger juice or minced ginger (for enhanced flavor)
  • 3 Tbsp corn syrup or mulyeot (for gloss and sweetness)
  • 1 Tbsp sesame oil
  • A pinch of black pepper

Cooking Instructions

First, rinse the tteokguk tteok (rice cake slices) under cold water and let them soak. This step helps the rice cakes absorb the sauce better and become tender.

Time to prepare the vegetables! Thinly slice the onion. Diagonally slice the green onion. Finely chop the Korean green chilies and red chili. If you enjoy extra spice, feel free to add more green chilies.

Trim the roots off the enoki mushrooms, rinse them gently, and then separate them into strands using a fork or your fingers. These will add a nice crisp texture towards the end of cooking.

Rinse the boneless chicken thighs under running water and cut them into bite-sized pieces. Season the chicken with a pinch of salt and black pepper. This initial seasoning enhances the natural flavor of the chicken.

Now, let’s make the delicious sauce! In a bowl, combine the gochugaru, gochujang, soy sauce, mirin, minced garlic, ginger juice, corn syrup, sesame oil, and black pepper. Mix everything thoroughly until well combined and the sweetener is dissolved.
