  • 2 bowls of cooked rice
  • 250g chicken breast
  • 2 Cheongyang peppers
  • 1/2 onion
  • 20g unsalted butter

Sauce
  • 1 Tbsp peanut butter
  • 3 Tbsp soy sauce
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp vinegar

Cooking Instructions

Step 1

First, we’ll cook the chicken breast. Place the chicken breast in a pot filled with plenty of water. Once the water boils, add the chicken breast and cook for about 15-20 minutes until fully cooked through. Once cooked, remove the chicken breast and let it cool slightly.

Step 2

While the chicken breast is cooking, let’s prepare the other ingredients. Finely mince 2 Cheongyang peppers, removing the seeds. Slice half an onion thinly, and finely mince the other half. If you prefer less spiciness from the minced onion, you can soak it in cold water for a few minutes and then drain it well.

Step 3

Now, let’s make the delicious spicy peanut butter sauce. In a small bowl, combine the minced onion, minced Cheongyang peppers, 1 Tbsp peanut butter, 3 Tbsp soy sauce, 1 Tbsp oligosaccharide, and 1 Tbsp vinegar. Stir well with chopsticks or a small whisk until all ingredients are thoroughly combined to create the flavorful sauce.

Step 4

Once the chicken breast is cooked, shred it into bite-sized pieces using forks or your hands. Place two bowls of warm rice into serving bowls. Then, generously arrange the shredded chicken breast on top of the rice.

Step 5

Neatly place the thinly sliced onions over the shredded chicken breast. Drizzle the prepared spicy peanut butter sauce generously over the chicken and onions. Don’t be shy with the sauce; it makes it even tastier!

Step 6

Finally, place the 20g of unsalted butter on top of the rice. It will melt from the warmth of the dish. Before eating, mix everything together thoroughly with chopsticks or a spoon until well combined. Your delicious Chicken Breast Butter Rice is now ready to be enjoyed!
