I made a spicy chicken dish with a very simple seasoning using chicken drumettes, a favorite of my eldest son. It turned out so delicious that I regret not trying this method sooner! Both of my sons loved it, with the younger one even calling it the best chicken he’s ever eaten. It’s always a funny debate which one is the ‘best’ chicken, but as long as they enjoy it, that’s all that matters! Since we’re using drumettes, you don’t need to fry them for a long time.   • 2 packs chicken drumettes (approx. 1.2kg)
  • 1/2 cup soju (Korean rice wine)
  • 1 Tbsp chili seasoning powder
  • 1 Tbsp salt
  • Chicken powder (for coating)
  • Water
  • Cooking oil (for frying)
  • 1 Tbsp chili seed oil

Cooking Instructions

Begin by thoroughly washing the chicken drumettes under running water. Trim any excess fat or blood from the drumettes for a cleaner taste. To tenderize the meat and remove any gamey smell, soak the prepared drumettes in 1/2 cup of soju for about 10 minutes.

After soaking, pat the chicken drumettes completely dry with paper towels. Make 2-3 slits on each drumette; this helps the marinade penetrate better and speeds up the cooking time, resulting in a more flavorful chicken. Use kitchen scissors to trim around the joints for a neater appearance after frying.

Now, let’s prepare the delicious marinade. In a bowl, combine 1 tablespoon of chili seasoning powder, 1 tablespoon of salt, and 1 tablespoon of chili seed oil. Mix well. Coat the prepared chicken drumettes evenly with this marinade. Let them marinate in the refrigerator for 30 minutes, allowing the flavors to fully infuse into the chicken.

While the chicken is marinating, prepare the coating. In a wide dish or bowl, place a generous amount of chicken powder. Gradually add cold water, mixing until you achieve a batter consistency that is not too thin and can coat the chicken well. First, dredge the marinated drumettes in dry chicken powder, then dip them into the prepared batter, ensuring they are fully coated. Finally, lightly coat them again with dry chicken powder for an extra crispy crust.

Heat a generous amount of cooking oil in a deep pan or fryer to about 170°C (340°F). Carefully place the coated chicken drumettes into the hot oil, ensuring they don’t touch each other. Fry for approximately 8-10 minutes, or until the chicken is golden brown and crispy. Maintain a medium heat and adjust as needed to ensure the chicken is cooked through. Flip the drumettes halfway through for even cooking.

Once perfectly fried, remove the spicy chicken from the oil and place it on paper towels to drain any excess oil. Transfer the crispy chicken to a serving dish or your desired container. You’ve now created a fantastic homemade spicy chicken! Serve immediately while hot for the ultimate crispy exterior and juicy interior. It makes a wonderful snack or appetizer!
