- 1 egg
Seasonings & Aromatics- 1.5 Tbsp cooking oil
- 0.5 Tbsp red pepper flakes (gochugaru)
- 0.5 Tbsp minced garlic
- 1/2 stalk green onion, chopped
- 1 Tbsp fish sauce (or salted shrimp/salt)
- 1.5 Tbsp cooking oil
- 0.5 Tbsp red pepper flakes (gochugaru)
- 0.5 Tbsp minced garlic
- 1/2 stalk green onion, chopped
- 1 Tbsp fish sauce (or salted shrimp/salt)
Cooking Instructions
Step 1
First, prepare one packet of soft tofu (350g). You can gently press the packet to help break up the tofu inside the earthenware pot later.
Step 2
Add one packet of thoroughly washed clams (200g) to the earthenware pot and bring it to a boil. This step allows the clams to release their sweet, oceanic flavor into the broth.
Step 3
Once the clams are added and the pot is heating up, let it boil for about 7 to 8 minutes. Keep in mind that earthenware pots retain heat, so this cooking time is approximate. Ensure the clams have fully opened and are cooked through.
Step 4
While the clams are simmering, prepare the seasonings that will add depth and aroma to your stew. Have 0.5 Tbsp of minced garlic and 1/2 stalk of chopped green onion ready.
Step 5
Prepare 0.5 Tbsp of red pepper flakes (gochugaru), which is key to the stew’s spicy kick. We’ll use this to create a quick and easy chili oil.
Step 6
To easily infuse the oil with chili flavor, place 0.5 Tbsp of red pepper flakes in a small bowl. Then, pour 1.5 Tbsp of cooking oil over the flakes.
Step 7
Using a spoon, stir the red pepper flakes and oil together. This simple method allows you to make fresh chili oil without the hassle of simmering it separately. This is my secret tip for making chili oil easily! [Easy Chili Oil Method]
Step 8
Once mixed, you’ll have a vibrant, flavorful chili oil ready to go. It will add both a beautiful color and a delicious taste to your stew.
Step 9
When the clams in the earthenware pot are bubbling merrily, add the prepared soft tofu. You can add the tofu in its packet and gently break it apart with a spoon once it’s in the pot.
Step 10
Add the soft tofu and gently break it into chunks with your spoon. Be careful not to stir too vigorously, as this can cause the tofu to disintegrate completely.
Step 11
Now it’s time to season the stew. You can use fish sauce, salted shrimp, or salt to your preference. We’ve opted for 1 Tbsp of fish sauce to enhance the savory notes.
Step 12
Add the chopped green onion to the stew. The fresh, aromatic scent of the green onions will complement the rich flavors of the stew.
Step 13
Drizzle the homemade chili oil over the stew. This will add a lovely spicy aroma and a deeper flavor profile.
Step 14
Finally, crack one fresh egg directly into the stew. The gently cooked egg yolk will add a creamy richness. Wow! Your simple and delicious Clam Soft Tofu Stew is ready! This satisfying meal can be made in just about 10 to 15 minutes. Enjoy!
