Crab Fry Ingredients- 3 fresh crabs
- A pinch of dried red chili peppers (or Cheongyang chili peppers)
- 5-6 cloves of garlic
- 1/2 green bell pepper
Cooking Instructions
Step 1
Thoroughly clean the crabs under running water using a brush. Using fresh crabs is key to the best flavor. Cut the body into 4 serving-sized pieces and trim the legs. If the shells are particularly hard, you can lightly tap them with the back of a knife.
Step 2
Evenly coat the cleaned crabs with a generous amount of starch. Coating the crab with starch helps prevent moisture loss during frying, resulting in a crispier texture. Gently shake off any excess starch.
Step 3
Since deep-frying might be difficult at home, pour a moderate amount of cooking oil into a wide pan and fry the crabs over medium heat. Add the crabs to the pan and continuously toss them with chopsticks until all sides are golden brown and crispy. Be mindful of the heat to prevent burning.
Step 4
Once fried to perfection, remove the crabs from the pan and place them on paper towels to drain any excess oil. This step ensures the fried crab stays crispy and less greasy.
Step 5
Thinly slice the garlic into slivers. Slicing the garlic this way will release a rich aroma when stir-fried.
Step 6
Heat a pan with a generous amount of cooking oil. Add the sliced garlic and dried red chili peppers (or Peperoncino) and stir-fry over low heat to infuse the oil with their flavors. Cook until the garlic is golden brown, being careful not to burn it.
Step 7
Gently push the fragrant garlic and chilies to one side of the pan. Add the fried crabs to the pan. Then, add 3 tablespoons of the oil used for frying the crabs and 3 tablespoons of chili oil, and stir-fry everything together. (You can adjust the amount of oil based on your pan size.)
Step 8
Increase the heat to medium and quickly stir-fry for 1-2 minutes until the crabs are coated with the spicy aroma. At this stage, you can add a little soy sauce or sugar for extra flavor. Stir gently to avoid breaking the crabs.
Step 9
Finally, add the chopped green bell pepper and stir-fry for just about 1 minute until slightly tender but still vibrant. This adds color and a fresh element. Immediately turn off the heat. Serve the delicious fried crab immediately!
