Today, I’ve created a super easy kimbap featuring plenty of spicy stir-fried fish cakes. I’ve also added perilla leaves to enhance the aroma and flavor, making it both simple and delicious. The perilla leaves not only add a wonderful fragrance and texture but also help keep the kimbap looking neat by preventing the spicy fish cake filling from directly touching the rice.   • 2 bowls of cooked rice

Fish Cake Stir-fry Seasoning

  • 3 Tbsp soy sauce
  • 2 Tbsp gochugaru (Korean chili powder)
  • 1/2 Tbsp sugar
  • 1 Tbsp sesame oil

Rice Seasoning

  • 1/2 tsp salt
  • 3 Tbsp sesame oil

Cooking Instructions

First, prepare the 2 sheets of square fish cakes. Slice them thinly lengthwise into strips that are easy to place inside the kimbap. Try not to slice them too thinly to maintain a pleasant texture.

Prepare 15 perilla leaves. This recipe yields about 3 kimbap rolls, using approximately 5 leaves per roll. Perilla leaves act as a barrier, preventing the spicy fish cake filling from directly contacting the rice, which keeps the kimbap looking clean. They also add a wonderful fragrance and enhance the overall flavor. If you enjoy the aroma and texture of perilla leaves, definitely include them! If you’re not a fan of the strong perilla scent or don’t have them on hand, you can omit them, and the kimbap will still be delicious.

Let’s make the seasoning for the stir-fried fish cakes. In a bowl, combine 2 Tbsp gochugaru, 3 Tbsp soy sauce, 1/2 Tbsp sugar, and 1 Tbsp sesame oil. Mix well until the seasoning is evenly incorporated.

Once the fish cakes are tender and most of the water has evaporated, add the prepared seasoning. Stir and cook over medium-low heat until the seasoning is evenly coated and has penetrated the fish cakes. You’ll achieve a glossy and flavorful spicy fish cake stir-fry.

Now, let’s season the rice for the kimbap. In a bowl of warm cooked rice (about 2 bowls), add 1/2 tsp salt and 3 Tbsp sesame oil. Gently mix with a spatula, ensuring the seasoning is evenly distributed without mashing the rice grains.

The added fragrance from the perilla leaves will also make it taste even better.
