I made simple yet delicious spicy fish cake kimbap using fish cakes left in the refrigerator. I made a little extra and packed it as a lunchbox for a picnic on a warm spring day. Kimbap made at home has a different, special taste compared to store-bought. The simple spicy seasoning soaked into the fish cakes made it incredibly enjoyable. Why don’t you try making it today?

Kimbap Ingredients

  • 2 sheets of flat fish cake
  • 3 sheets of kimbap seaweed (gim)
  • 2 bowls of cooked rice
  • 1 Tbsp sesame oil
  • Pinch of salt
  • Pinch of sesame seeds

Spicy Fish Cake Glaze

  • 1 Tbsp hot red pepper powder (gochugaru)
  • 1 Tbsp red pepper paste (gochujang)
  • 1 Tbsp soy sauce
  • 3 Tbsp water

First, briefly blanch the flat fish cakes in boiling water. This helps remove any impurities and results in a softer texture.

Now, let’s glaze the blanched fish cakes with a spicy sauce. In a bowl, mix 1 Tbsp hot red pepper powder, 1 Tbsp red pepper paste, 1 Tbsp soy sauce, and 3 Tbsp water. Heat a pan over low heat, add the sauce and blanched fish cakes, and cook until the sauce is well absorbed by the fish cakes. I remember making ‘jjanga kimbap’ (super spicy kimbap) by adding chopped Cheongyang chili peppers last time, which was incredibly delicious. I intended to add them again today, but unfortunately, I didn’t have any at home, so I omitted them. However, the seasoning alone is quite tasty!

Season the warm cooked rice with 1 Tbsp sesame oil and a pinch of salt. Gently mix with a spatula to avoid clumping the rice grains.

It’s time to roll the kimbap. Initially, I only put one strip of fish cake, but from the second roll onwards, I layered two strips of fish cake. Indeed, with more filling, the taste becomes much better. While kimbap is delicious with various ingredients, its charm lies in the fact that you can enjoy a tasty kimbap simply with fish cakes, like this one.
