Main Ingredients

  • Pork ribs 600g
  • Aged Kimchi 1 head (approx. 700g)
  • 1 Onion (sliced thinly)
  • 1 Scallion (sliced diagonally)
  • 3 Cheongyang peppers (Korean chili peppers, sliced diagonally)
  • 5-7 Whole garlic cloves
  • Rice water (enough to cover ribs)

Seasoning Sauce

  • Gochujang (Korean chili paste) 2 Tbsp
  • Sugar 3 Tbsp
  • Soy sauce 4 Tbsp
  • Plum extract 2 Tbsp
  • Gochugaru (Korean chili flakes) 4 Tbsp
  • Oligosaccharide 1.5 Tbsp
  • Minced garlic 2 Tbsp
  • Rice wine (Mirin or Cheongju) 2 Tbsp
  • Salt (to taste)
  • Black pepper (to taste)

First, prepare the vegetables for the dish by cutting them into bite-sized pieces. Slice the onion thinly, and diagonally slice the scallions and Cheongyang peppers. Leave the whole garlic cloves as they are.

Soak the pork ribs in cold water to remove blood for about 30 minutes to 1 hour. Once the blood is drained, place the ribs in a pot, cover with water, add the whole garlic cloves and a pinch of black pepper, and boil for about 10 minutes. After boiling, rinse the ribs thoroughly under cold water to remove any impurities. This step helps to eliminate any gamey odor.

Take the boiled pork ribs and tear the aged kimchi into strips. Roll each strip of kimchi around the ribs. Tightly wrapping the ribs with kimchi ensures the flavors meld together beautifully.
