Tteokbokki Ingredients

  • 3 servings rice cakes (tteok) (approx. 300g)
  • 2 sheets of fish cake (eomuk)
  • 1 packet of ramen noodles
  • 1/4 stalk of green onion, chopped

Base Broth

  • 1,000ml anchovy-kelp broth (or store-bought broth)

Cooking Instructions

Step 1

First, prepare the rice cakes and fish cakes for the tteokbokki. If using frozen rice cakes, rinse them under cold water to separate them. Cut the fish cakes into bite-sized pieces (about 2cm wide) and lightly rinse them with water.

Pour 1,000ml of rich broth, made from anchovies, kelp, and dried shrimp and stored in the refrigerator, into a pot. (If you don’t have homemade broth, you can use 1,000ml of water mixed with about 1/2 tsp of Dashida, a Korean soup stock.)

In the broth, dissolve all the seasoning paste ingredients (2 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp guk-ganjang, 2 Tbsp sugar) and mix well. Adding an extra tablespoon of corn syrup or oligosaccharide instead of some sugar will add shine and sweetness. Once the seasoning is well combined, add the rice cakes and fish cakes and bring to a boil over high heat. Stir occasionally to prevent the rice cakes from sticking to the bottom.

Once the broth starts to boil vigorously as the rice cakes and fish cakes cook, add the ramen noodles. The noodles will soften and the broth will thicken further. Continue to boil for another 2-3 minutes until the noodles are cooked to your liking.

Finally, add the chopped green onions and simmer for a bit longer to complete this delicious soup tteokbokki! For an even more satisfying meal, consider adding a hard-boiled egg or dumplings.
