Irresistibly Addictive Gochujang Braised Potatoes
Since it’s potato season, I made a delicious side dish for my family using fresh potatoes. This dish lasts for about a week, making it a convenient staple. Enjoy this flavorful and satisfying braised potato recipe!
Main Ingredients- 400g potatoes (about 2 medium-sized potatoes)
Seasoning Ingredients- 1 Tbsp Soy Sauce (or ‘Matganjang’ – seasoned soy sauce)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 tsp Minced Garlic
- 1 tsp Red Pepper Flakes (Gochugaru)
- 1 Tbsp Sugar (adjust to taste)
- 1 tsp Anchovy Sauce (for umami)
- 2 Tbsp Peanut Oil (for nutty aroma and flavor)
- 250ml Water (approx. 1.5 paper cups)
- 1 Tbsp Soy Sauce (or ‘Matganjang’ – seasoned soy sauce)

Cooking Instructions
Step 1
Let’s start making delicious braised potatoes! First, thoroughly wash the potatoes. Then, peel them and cut them into bite-sized cubes, about 2cm in size. Cutting them uniformly ensures even cooking.
Step 2
Preheat a frying pan over medium heat and add 1 tablespoon of peanut oil. Add the cubed potatoes and sauté for about 2-3 minutes until they are lightly golden brown. This step helps the potatoes absorb the seasoning better and improves their texture.
Step 3
Now, let’s prepare the flavorful seasoning! In a bowl, combine the soy sauce, gochujang, minced garlic, red pepper flakes, sugar, and anchovy sauce. Mix them well to create a uniform seasoning paste. If you prefer a sweeter taste, you can add an extra half tablespoon of sugar. Alternatively, for a sugar-free option, you can substitute with allulose.
Step 4
Pour the prepared seasoning paste and 250ml of water over the sautéed potatoes. Cover the pan with a lid and simmer over medium heat for about 15 minutes, or until the potatoes are tender and the sauce has thickened to a nice glaze. Stir occasionally to prevent sticking.
