- Flaxseeds (for garnish)
- Lemon slices (for serving)
Spicy Gochujang Sauce- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oligodang (corn syrup) or corn syrup
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 1 Tbsp Cheongju (rice wine) or Mirin
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oligodang (corn syrup) or corn syrup
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 1 Tbsp Cheongju (rice wine) or Mirin
Cooking Instructions
Step 1
First, rinse the dried croaker fish thoroughly under running water. Use a knife or scissors to scrape off the scales and carefully remove the fins, especially from the back and belly, to prepare them for cooking. Pat them dry gently with paper towels.
Step 2
In a bowl, combine all the sauce ingredients: gochujang, oligodang, sesame oil, minced garlic, and cheongju. Mix well until smooth to create the spicy gochujang sauce. In a separate bowl, place the shredded scallions and massage them gently with cold water to remove any harsh spiciness and enhance their crispness. Squeeze out as much water as possible from the rinsed scallions.
Step 3
Evenly coat both sides of the dried croaker fish with potato starch. This coating will help create a crispy exterior and allow the sauce to adhere better.
Step 4
Heat a generous amount of cooking oil in a pan over medium-low heat. Place the starch-coated dried croaker fish in the pan and pan-fry until golden brown and slightly crispy on both sides, turning occasionally. Be mindful of the heat to prevent burning.
Step 5
Arrange the nicely fried dried croaker fish on a serving plate. Place lemon slices on the side. Generously brush the cooked fish with the prepared spicy gochujang sauce. For a lovely texture and nutty flavor, finely grind the flaxseeds (using a mortar and pestle or grinder) and sprinkle them evenly over the sauced fish.
Step 6
Finally, arrange the well-drained shredded scallions either piled on top of the fish or form them into a small circle in the center of the plate. This completes your delicious Spicy Gochujang Glazed Grilled Dried Croaker! Serve immediately for the best taste and texture. This dish is sure to be a delightful meal for the whole family.
