Deodeok, also known as ‘Sasum’ or ‘lance asiabell root’, has long been recognized for its health benefits, including boosting energy, alleviating insomnia, and supporting respiratory health. This recipe, enhanced with honey, is an excellent choice for a healthy diet to strengthen your immune system during the changing seasons. Main Ingredients- 500 grams Deodeok (lance asiabell root)
Spicy & Sweet Marinade- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Jin-ganjang (Korean soy sauce)
- 1 Tbsp Sugar
- 1 Tbsp Mirim (rice wine for cooking)
- 1 Tbsp Sesame oil
- 2 Tbsp Cooking oil
- 1 Tbsp Toasted sesame seeds
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Jin-ganjang (Korean soy sauce)
- 1 Tbsp Sugar
- 1 Tbsp Mirim (rice wine for cooking)
- 1 Tbsp Sesame oil
- 2 Tbsp Cooking oil
- 1 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
First, carefully peel the deodeok. Once peeled, gently pound the deodeok with the back of a knife to tenderize it, then cut it into 6cm lengths for easy eating. To preserve its fragrant aroma, it’s best not to cut it too thinly.
Step 2
In a small bowl, combine 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp jin-ganjang, 1 Tbsp sugar, and 1 Tbsp mirim. Mix thoroughly with a spoon to create a delicious marinade. Adding a touch of honey instead of sugar can offer a healthier and deeper flavor profile.
Step 3
Place the prepared deodeok in a larger bowl. Pour the prepared marinade over it. At this point, add 1 Tbsp of cooking oil and mix the deodeok with the marinade using your hands, ensuring it’s evenly coated. Adding cooking oil will make the deodeok more tender and help the marinade adhere better, resulting in a tastier grilled dish.
Step 4
Let the marinated deodeok rest for about 10 minutes. This step allows the flavors of the marinade to fully penetrate the deodeok, enhancing its deep taste.
Step 5
Heat 1 Tbsp of cooking oil in a pan over medium heat. Arrange the marinated deodeok in a single layer. Grill, flipping occasionally, until it’s lightly browned. Be careful not to burn the deodeok, ensuring it cooks evenly.
Step 6
Once the deodeok is partially cooked and has changed color, carefully pour 3 Tbsp of water around the edges of the pan. Drizzle sesame oil evenly over the top, then quickly cover with a lid. Reduce the heat to low and let it steam for a few minutes. This process will make the deodeok moist and tender, and the sauce will thicken nicely.
Step 7
When the deodeok is fully grilled and looks appetizing, turn off the heat. Arrange the finished grilled deodeok attractively on a serving plate. Finally, sprinkle with toasted sesame seeds for added nutty flavor and aroma, completing your delicious Spicy Gochujang Grilled Deodeok.
