Main Ingredients

  • Pork 200g (for stew)
  • Potato 1 (medium)
  • Onion 1/4
  • Zucchini 1/4
  • Korean chili pepper (Cheongyang) 2
  • Green onion 1/2 stalk

Cooking Instructions

Step 1

Start by preparing your stew pot. Add 200g of pork and 1/2 Tbsp of salted shrimp to the pot. Then, add 1 Tbsp of gochujang, 1 Tbsp of gochugaru, and a splash of cooking oil. Now, stir-fry all these ingredients together. Incorporating salted shrimp while stir-frying adds a wonderful savory depth, making the stew refreshingly rich.

Step 1

Step 2

When stir-frying with gochujang and gochugaru, keep the heat on low to prevent the paste from burning. Stir-frying slowly over low heat allows the gochujang’s savory aroma to develop and deepens the overall flavor. Continue to stir-fry until the pork is fully cooked.

Step 2

Step 3

Once the pork is sufficiently stir-fried, add the pre-cut potatoes and zucchini to the pot. Don’t worry if you don’t have these exact vegetables; feel free to use other vegetables you have on hand. This is a great way to use up leftover vegetables from holidays or gatherings.

Step 3

Step 4

Now, pour in 500ml of water. For an even richer flavor, consider using anchovy-kelp broth or vegetable broth instead of plain water. Once the water is added, cover the pot and let it simmer until the potatoes are tender when pierced with a fork.

Step 4

Step 5

When the potatoes are nearly cooked, add 1 Tbsp of minced garlic, 2 Tbsp of soy sauce, and 1 Tbsp of sugar. Let it simmer for a bit longer. If the stew seems too reduced during cooking, add a little more water and adjust the seasoning with soy sauce. It’s better for a stew to be slightly on the saltier side so it pairs well with rice.

Step 5

Step 6

Finally, add the sliced onion, Korean chili peppers, and green onions to the pot, and bring it to a boil one more time. For an extra spicy kick, the Cheongyang peppers were halved, but you can also slice them or remove the seeds according to your preference. Once all the ingredients have melded together, your delicious Gochujang Stew is ready!
