Spicy and Savory Gochujang Tofu Stew
Introducing a delicious Gochujang Tofu Stew with a wonderfully spicy broth. The combination of pork, tofu, and fiery gochujang creates a rice-stealing dish that will awaken your appetite. Make this simple stew at home for a satisfying meal!
Main Ingredients- Pork belly for stew (cut) 600g
- Tofu 2 blocks (approx. 600g)
- 1 stalk Green onion (mostly white part)

Step 1
Hello everyone! Today, we’re going to make a deliciously spicy Gochujang Tofu Stew. It’s a dish with a magical flavor that will make you finish a whole bowl of rice in no time.
Step 2
First, prepare 600g of pork belly cut for stew. Cut it into thick, bite-sized pieces, about 1.5cm thick, for a pleasant chew. Prepare 2 blocks of tofu and cut them into large pieces. Chop 1 stalk of green onion diagonally, focusing on the white part.
Step 3
Heat a pot and add 2 Tbsp of perilla oil. Add the sliced pork belly and stir-fry over medium heat until the pork is nicely browned. Once the pork is partially cooked, add a generous 3 Tbsp of gochujang and stir-fry together to ensure the seasoning is well incorporated. Continue to stir-fry for about 1-2 minutes, allowing the gochujang to coat the pork.
Step 4
Add 1 Tbsp of minced garlic and stir-fry for a moment until fragrant. Now, pour in about 400ml of rice water to cover the ingredients generously. If you don’t have rice water, you can use plain water or an anchovy-kelp broth.
Step 5
Bring to a boil over high heat. Once it starts bubbling, add the sliced tofu and green onions. Gently add the tofu to avoid breaking it.
Step 6
For an extra spicy and deep flavor, you can add an additional 1 Tbsp of gochugaru and 1 Tbsp of shiitake mushroom powder. Shiitake mushroom powder adds a wonderful umami, so we highly recommend adding it!
Step 7
After adding all the ingredients, let it boil for another moment. Once the stew is bubbling vigorously, reduce the heat to low and simmer gently for about 10 minutes. This simmering process allows the flavors of the ingredients to meld deeply into the broth and for the tofu to absorb the seasoning.
Step 8
Your delicious Gochujang Tofu Stew is now complete! Enjoy it with a hot bowl of rice. Leftover stew can be reheated the next day for an even deeper flavor.
