Main Ingredients

  • Handmade dumpling dough (sujebi) 200g (store-bought or homemade)
  • Well-fermented kimchi 3 Tbsp (finely chopped)
  • Onion 1/8 medium (thinly sliced)
  • Green onion 5cm (chopped)
  • Korean green chili pepper (Cheongyang) 1/2 (bias cut)
  • Red chili pepper 1/2 (bias cut)

Seasoning and Broth Ingredients

  • Anchovy-kelp broth 4 cups (approx. 800ml)
  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili powder) 2 Tbsp (add more for extra spice)
  • Minced garlic 1 Tbsp
  • Soup soy sauce 1 Tbsp (or fish sauce, for adjusting saltiness)

Cooking Instructions

In a pot, combine the anchovy-kelp broth (4 cups) and gochujang (2 Tbsp). Whisk until the gochujang is dissolved, then bring to a boil over high heat. Once boiling, reduce the heat to medium.

Once the broth is simmering, add the chopped kimchi (3 Tbsp), gochugaru (2 Tbsp), minced garlic (1 Tbsp), and soup soy sauce (1 Tbsp). Stir well to combine. Gently drop the sujebi dough pieces into the pot, one by one, ensuring they don’t clump together. Stir occasionally as they cook. Taste the broth and adjust seasoning with more soup soy sauce or salt if needed.

When the sujebi dumplings are cooked through and float to the surface, add the sliced onion (1/8), chopped green onion, bias-cut Korean green chilies, and red chilies.
