Spicy Jjamppong (Korean Noodle Soup)

On a holiday, it’s got to be Chinese food! Chinese food is perfect for birthdays, sports days, or moving days! Jjajangmyeon or Jjamppong, that is the question~ What’s your choice? This recipe brings you a delicious Jjamppong, packed with chewy seafood and crisp vegetables, perfect for a special meal.
Main Ingredients
- 200g Pork
- 1 Zucchini
- 1/2 Carrot
- 1.5 Onions
- 1/4 head Napa Cabbage
- 1/4 head Green Cabbage
- 2 Scallions
- 1 handful Mushrooms (e.g., shiitake, king oyster)
- 1 Squid
- 1 cup Shrimp
Cooking Instructions
Step 1
First, prepare a generous amount of fresh vegetables that will determine the flavor of your Jjamppong. Slice the zucchini, carrot, onion, napa cabbage, and green cabbage into strips. Slice the scallions diagonally. Slice the mushrooms into bite-sized pieces as well.
★Secret to the Broth★ The more vegetables you add and the longer you stir-fry them, and the longer you simmer the soup, the deeper and sweeter the broth will become. Stir-frying the vegetables over high heat will enhance their flavor.
Step 2
Cut the pork into bite-sized pieces. In a bowl, combine the pork with 1 Tbsp minced garlic, 2 Tbsp gochugaru, and 1 Tbsp mirin. Mix well to marinate the meat.
Heat a pan and stir-fry the marinated pork until it’s nearly cooked through. Then, add 1.5 Tbsp oyster sauce, 2 Tbsp soy sauce, and a pinch of black pepper. Stir-fry quickly to add more flavor. (Measurements are based on a standard soup spoon.)
Step 3
Once the pork is nicely browned, add all the vegetables except for the napa cabbage (zucchini, carrot, onion, green cabbage, mushrooms, scallions) to the pan. Stir-fry continuously over high heat. Continue stir-frying until the vegetables soften slightly and release their sweet aroma. The more you stir-fry the vegetables, the richer the umami flavor of the Jjamppong will be.
Step 4
Pour about 1 to 1.2 liters of water into the pan with the stir-fried vegetables and pork. Bring it to a boil over high heat. Once the broth starts to bubble, add the cleaned shrimp and squid, along with the prepared napa cabbage.
After adding the seafood and napa cabbage, reduce the heat to medium-low. Cover the pot or leave it uncovered and simmer for at least 10 minutes, allowing the flavors of the ingredients to meld into the broth. The longer it simmers, the deeper and more refreshing the soup will taste.
Step 5
When the soup is boiling vigorously, it’s time to season it. Gradually add soup soy sauce or salt to adjust the taste according to your preference. Your spicy and refreshing Jjamppong broth is now ready!
Step 6
Serve the hot Jjamppong broth with chewy noodles for Jjamppong, or add rice to enjoy a hearty Jjamppong-bap. If you have leftover noodles, pour over a packet of instant Jjajang sauce and top with shredded cucumber for a delicious Jjajangmyeon on the side.
