Spicy Jjamppong Ramen
How to Make a Delicious Jjamppong Ramen at Home
Let’s learn how to easily make a rich and spicy Jjamppong Ramen right in your kitchen! This recipe uses the popular ‘Yeul Ramen’ for an even deeper flavor profile.
Main Ingredients- 1 pack Ramen noodles
- 500ml Beef bone broth (sogogi yuksu)
- 1/2 stalk Green onion (thinly sliced, separated for oil and garnish)
- 1/4 Onion (sliced)
- A little Carrot (sliced)
- A little Zucchini (sliced)
- 4 cloves Garlic (minced)
- 1 handful Clams (purged of sand)
Seasoning & Other Ingredients- 1.5 Tbsp Fine Gochugaru (Korean chili powder)
- 1-2 Tbsp Cooking oil
- 1.5 Tbsp Fine Gochugaru (Korean chili powder)
- 1-2 Tbsp Cooking oil
Cooking Instructions
Step 1
First, prepare some optional ingredients to enhance the Jjamppong Ramen’s flavor. Adding about 50g of thinly sliced beef (like for japchae) or 1/3 squid (cut into bite-sized pieces) will result in a much richer taste. Other seafood like scallops or shrimp are also great additions!
Step 2
Slice all your vegetable ingredients into uniform, manageable pieces. For the green onion, separate the white and green parts; the white will be used for making aromatic oil, and the green can be thinly sliced for garnish at the end.
Step 3
Heat 1-2 tablespoons of cooking oil in a deep pan over medium-low heat. Add the sliced white parts of the green onion and minced garlic. Slowly sauté until a fragrant green onion oil forms. Be careful not to burn the garlic; cooking it gently until its aroma is released is key.
Step 4
Once the green onion and garlic are fragrant, turn up the heat to high. Add the sliced onion, carrot, and zucchini. Stir-fry quickly until the vegetables are slightly charred. Stir-frying them until they are just about to char will add a smoky flavor characteristic of jjamppong. Try not to overcook them until they become too soft.
Step 5
After stir-frying the vegetables well, reduce the heat to very low or turn it off completely for a moment. In this state, add the fine gochugaru and the ramen soup powder. Mix them in quickly.
Step 6
If you mix gochugaru too long, it can burn! Mix it quickly to avoid burning, and then immediately pour in the beef bone broth (500ml). Turn the heat back up to high and bring the broth to a boil. While the broth heats up, stir to combine the sautéed vegetables and seasonings.
Step 7
Once the broth is rapidly boiling, add all the purged clams. Cook for about 1-2 minutes, or until the clams open their shells. This will release a delicious clam broth, adding a wonderful seafood flavor to the soup.
Step 8
Now, add the ramen noodles. Cook according to the package instructions or to your preferred level of doneness. Setting a timer will make this easier.
Step 9
Check if the ramen noodles are cooked to your liking. If you prefer a chewier texture, reduce the cooking time slightly.
Step 10
Finally, garnish the ramen with the thinly sliced green onion you set aside earlier. Your delicious, spicy, and rich Jjamppong Ramen is now ready!
Step 11
Enjoy your hot and flavorful Jjamppong Ramen! ^^
