Ingredients

  • 1 pack instant ramen
  • 1/2 mushroom (e.g., oyster or shiitake)
  • 1/2 onion
  • 10cm piece of scallion
  • 1 handful thinly sliced pork belly (about 5-6 pieces)
  • 1 Tbsp soy sauce
  • 1 Tbsp chili powder (gochugaru)

First, prepare your ingredients. Slice the onion thinly or dice it into roughly 1cm cubes for a pleasant texture, similar to how you might cut them for pickled onions. Slice the mushroom into bite-sized pieces. Chop the scallion. Use the thinly sliced pork belly as is.

Heat 2-3 tablespoons of cooking oil in a pot or deep pan over medium heat. Add the chopped scallions and sauté until fragrant to infuse the oil with their aroma. Next, add the thinly sliced pork belly and cook until it’s lightly browned and some fat has rendered. Then, add the sliced onion and mushrooms, and stir-fry everything together until the vegetables begin to soften. (Pro Tip: For an extra kick of ‘wok hei’ or smoky flavor, you can vigorously toss the ingredients in the pan over high heat. Just make sure your kitchen is well-ventilated if you try this!)

Once the ingredients are sautéed, add 1 tablespoon of soy sauce and 1 tablespoon of chili powder. Stir-fry for another minute, being careful not to burn the spices. This step helps to deepen the flavors and integrate the seasoning with the sautéed ingredients.
